Healthy Shrimp in Garlic White Wine Sauce

A lightened up version of a classic Italian recipe.  I made this for dinner yesterday and it hit the spot.  This recipe has 2/3 the calories and half the fat and saturated fat of the original dish, but it lacks nothing in flavor:






Yum!

Serves 4.

Ingredients:
2 tablespoons olive oil
2 teaspoons red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon minced garlic
1 pound shrimp, peeled and deveined
1/4 cup butter
1 cup white wine
1/4 cup fresh parsley, finely chopped
1/4 cup fresh oregano, finely chopped
8 ounces pasta

Directions:
Add oil, red pepper, garlic, salt, and pepper to a skillet. Heat over medium-low heat. Lay the shrimp out flat in the pan and simmer for 2 minutes. Turn the shrimp and simmer until fully cooked, about another 2 minutes. Remove the shrimp from the heat and set aside.

Start cooking the pasta in a separate pot. Add butter and wine to the skillet. Simmer over low heat - do not boil - until reduced to half. When sauce is reduced, add shrimp, parsley, and basil. Stir well to coat shrimp and keep warm.

Drain the pasta and toss with sauce and shrimp. Serve.

Per serving: 498 calories, 19 g fat, 46.4 g carbohydrates, 26.5 g protein
